Their process begins by selecting the malted barley that is moistened to begin germination. It is then dried with hot air. No peat is used for drying, so the distillate retains a clean and fruity profile, without smoky notes.

The dry malt is ground into a coarse flour and mixed with hot water in a container called a mash tun, where the starches are transformed into fermentable sugars. The water used comes from springs near the distillery, known for their purity and low mineralization.

The sweet must is transferred to large fermentation tanks, where yeast is added.

The distillation is carried out in traditional copper stills. The distillate is placed in oak barrels and matures for 15 years. After 15 years of maturation, experts test numerous barrels and choose only those that stand out for their quality.

Before bottling, it is not cold filtered, thus preserving natural oils and a richer texture, and no coloring is added.

Nose:

The first impression is fresh and elegant. Layers of green apple, pear and peach appear. Flower honey, vanilla and pastry cream. Aromas of butter cookies, almond and hazelnut. Touches of freshly cut grass.

Mouth:

Entrada sedosa y cremosa, con un equilibrio muy logrado entre dulzor y frescura. Flavors of sweet malt, caramelized apple, honey and toffee. Light notes of vanilla, cinnamon and white chocolate. Long and persistent finish of ripe fruit, candied citrus and soft spices. A light touch of cocoa and dry wood that lingers pleasantly.
