The GlenAllachie 9 years old Amontillado Sherry Cask Finish is a single malt whiskey from Speyside that has been aged for 9 years and finished in Amontillado sherry casks, which gives it a very elegant profile and different from other sweeter sherry finishes. Amontillado is a type of sherry wine that combines biological and oxidative aging. For this reason, it gives the whiskey drier, more elegant and nutty notes than a finish in Oloroso or Pedro Ximenez, which are usually sweeter.

Winemaking
It follows the traditional process of a Scottish single malt, with a special finish in Amontillado barrels. High-quality malted barley is used, which is soaked, germinated and dried to develop the enzymes that will transform starch into fermentable sugars. The malt is ground and mixed with hot water in the "mash tun", the sugars are extracted obtaining a sweet liquid called wort. It is cooled and transferred to fermentation vats, yeast is added, which converts the sugars into alcohol and generates numerous aromatic compounds for several days.
The fermented liquid is distilled twice in copper stills, only the heart of the distillation is selected, the highest quality fraction for aging.
The distillate ages mainly in American oak barrels that previously contained bourbon. In the last years of maturation, the whiskey is transferred to barrels that previously contained Amontillado sherry wine. Finally, it is bottled without cold filtering, which helps preserve more of the aromas, texture and natural oils. No dyes are added either, its color comes exclusively from the wood.
Tasting notes

Intense amber color with copper reflections.
Nose:
Aromas of heather honey and butter caramel, notes of toasted almonds, hazelnuts and walnuts. You can appreciate aromas of figs, apricots and raisins, hints of vanilla, cinnamon and nutmeg.
Mouth:
Silky entry and medium-high body. Flavors of almond, hazelnut and walnut very present, characteristic of the finish in Amontillado barrels. Balanced sweetness of honey and toffee. Notes of dark chocolate, candied orange peel and sweet spices. Its finish is long and persistent, dry and elegant, with hints of toasted nuts, cocoa and spices. A slight touch of saline and oak.
