Description
PREPARATION
Whiskey made through a long fermentation process, without coloring and without cold filtering. The water for the dough comes from Ben Rinnes Mountain. The cooling water comes from ponds formed by a dam on the river. The architect of the distillery was Arthur Delmé-Evans, who also designed Tullibardine and the Isle of Jura. Glenallachie is a contemporary distillery that makes optimal use of gravity. All the equipment is in the same room. It has 2 Wash Still and 2 Spirit Still stills. It uses slightly crushed malt and the mash is done in a stainless steel semi-Lauter mash tun. Fermentation lasts 160 hours
TASTING
View: Mahogany color.
Nose: Aromas of heather honey, caramel and cinnamon, followed by waves of ginger, toasted almonds and mocha.
Mouth: Taste lots of molasses, dried raisins and caramel, with cinnamon, mint and honeycomb.
