Description
PREPARATION
Grapes: Pinot Noir.
Vollereaux Rosé de Saignée Brut is made using the bleeding method from Pinot Noir grapes, with aging on lees for 3 years after bottling and racking. For this phase, the bottles take advantage of the fresh, dark and mysterious atmosphere of the House's bicentennial cellars. Through the numerous passageways carved into the chalk, firmly encapsulated bottles are stacked and stabilized on slats. During the years of aging the yeasts work and produce bubbles. The foam slowly develops in the silent temple of the Maison Champagne Vollereaux.
TASTING
View: Intense raspberry color with light orange tones. The effervescence is fine and sustained, creating a beautiful foam on the surface.
Nose: Bouquet of small red fruits and crushed strawberries. When aerated, the nose reveals more gourmet notes, evoking aromas of pastries and vanilla.
Mouth: With a soft and sweet structure, the palate is full and covered. The aromas linger in the mouth with a long finish.
