PREPARATION

St. Petroni Rojois made in small batches following a meticulous selection of the best Albariño vintages from the Padrón Valley, an area blessed by a unique microclimate. Vinification on lees allows us to obtain a different character both in smells and flavors as well as in texture of the wine base, on which this excellent vermouth is made. Albariño wine is macerated with 29 native herbs meticulously hand-selected and deeply rooted in Galician culture, especially using wormwood, bay leaves, lemon verbena, mint, rosemary, thyme, sage, lemon balm, chamomile, hibiscus flowers, lemon pulp, sweet and bitter orange peel.

TASTING

Dark red color with copper highlights. Balanced anatomy, great crystallinity with surprising brilliance.

Nose:
Ripe fruit, vanilla and delicate pastries stand out, wrapped in balsamic, medicinal and spicy nuances.

Mouth:
It begins with a fresh, broad and elegant entry, capable of balancing the acid, the sweet and the bitter. Of great volume, amplitude and long distance. A bitter and intense sweet aftertaste stands out. Great complexity.
