Vegamar Gold of Alexandria 75cl.
Naturally sweet wine for which grapes from the Moscatel de Alejandría variety have been used. Description
PREPARATION
Grapes: 100% Muscat of Alexandria.
They select the best overripe Moscatel grapes from their vineyards and harvest them at night to take advantage of the freshness and avoid oxidation during the harvest to the winery. They have hopper trailers that go directly from the vineyard to the winery. The harvest is received throughout the night in the winery and they proceed to destemming and crushing. They apply liquid CO2 at -30°C to cool the harvest in line to 10°C and prevent oxidation in the must. Macerate for 12 hours at a temperature of 10°C and gently press with a pneumatic press. Only the clean must is fermented at a temperature of 16°C, adding a selection of yeasts. Once the desired alcoholic level is reached, they stop the fermentation by lowering the temperature to -2°C and filter to eliminate the yeasts, leaving the wine sweet due to the residual sugar from the Muscat must itself.
