Description

 PRODUCTION

The Santamanía gin is characterized by its delicate nuances and a continuous distillation process, with no concentrates or blends. It is made from an exceptional grape spirit, largely from the Tempranillo variety. Through a traditional “one-shot” distillation process, which includes both maceration and steam infusion of the botanicals. The maceration time of the botanicals varies between 4 and 24 hours depending on each of them. Distillation takes place in Vera, one of Destilería Urbana’s copper stills with a vaporization column and passage through a fractionating column, followed by resting and alternation with aeration through racking, which, in communion with exceptional water and after a resting period of 2 to 3 months, yields Santamanía Gin. The botanicals used are: Juniper (Juniperus communis), cinnamon (Cinnamomum verum), licorice (Glycyrrhiza glabra), pistachio (Pistacia vera), lime peel (Citrus × aurantifolia), lemon peel (Citrus x limon) and raspberry (Rubus idaeus), among others.

 TASTING

Appearance: Clean, bright and crystal-clear.

 

Nose: Subtlety of the most exotic botanicals with angelica root, cardamom, fine cinnamon and coriander, wrapped in the freshness of raspberry, citrus fruits and fresh rosemary. In the background, and very subtly, the fine fragrance of juniper can be perceived.

 

Palate: Slightly sweet entry, the result of licorice with light touches of grape. Sophisticated, smooth, fresh and unctuous, with floral sensations, citrus notes and a long persistence on the palate.
