Description
PREPARATION
Pâpidoux VSOP is made from the distillation of cider. The production process is carried out by distilling selected apples. 100 unique varieties of apple are steamed, including sweet, sour and bitter. The usual thing is 30% normal apple, 40% sour apple and 30% bitter apple. The fruits are macerated and squeezed until obtaining the must, which enters a fermentation process together with yeast, for a period of approximately 6 weeks. The resulting cider is distilled and subsequently placed in French oak barrels to age for a minimum period of 5 years, in accordance with the classification of its aging "Very Superior Old Pale" (V.S.O.P.).
The "Calvados Contrôlée Designation" guarantees that the entire production process, from the apple harvest, to cider production, distillation and long-term aging in oak barrels.
TASTING
View:
Bright golden color.
Nose:
Intense aromatic load where notes of fresh apple stand out.
Mouth:
It enjoys great refinement and elegance. On the palate, soft essences of apple are perceived, which are rounded with notes of aging.
