The Olivier Leflaive Saint-Aubin 1er Cru En Remilly 2023 is one of the most sought-after and refined white wines from the municipality of Saint-Aubin, celebrated for its incisive minerality and elegance, the result of the direct contiguity of this vineyard with the prestigious climat of Montrachet.

En Remilly is the most emblematic terroir of Saint-Aubin. Situated on a steep, sunny slope on the shoulder that connects the hill with Puligny-Montrachet and Chassagne-Montrachet, it has very thin white limestone soils. During the day it absorbs solar radiation and at night the rock returns the caloric radiation to the clusters. Characterized by being one of the warmest and most demanding campaigns, it required meticulous work in the vineyard and during harvesting. Despite the summer heat, the high proportion of limestone in the soil allowed it to maintain a crisp freshness and a notable aromatic tension.

Grapes: 100% Chardonnay

The production of Olivier Leflaive Saint-Aubin 1er Cru En Remilly 2023 follows a high-precision Burgundian winemaking method, designed to channel the minerality of the white limestone soil and the site's solar exposure In Remilly.

The 100% Chardonnay grapes from the hillside En Remilly are hand-picked into small perforated boxes to prevent premature rupture of the grain and oxidation of the must before reaching the winery. The whole bunches go directly to the pneumatic press. Slow and progressive pressing is applied to extract a clean and aromatic free-run must. Subsequently, a débourbage (cold static decantation) is carried out for 12 to 24 hours to settle the thick lees naturally.

The clean must is transferred to French oak barrels where alcoholic fermentation begins with native yeasts. Next, complete malolactic fermentation (100%) is carried out, converting malic acid into lactic acid to provide creaminess and bacteriological stability.

The wine remains for about 8 months in French oak barrels. Only 15% of the barrel stock is new, which allows adequate microoxygenation and a subtle texture without masking the primary aromas of the terroir. A very moderate bâtonnage (lees removal) is carried out.

The wine is extracted from the barrels and transferred to stainless steel tanks to rest during the last 4 months of aging. This final phase in tank allows the batch to be homogenized, settle the acid tension and define the saline finish. After light clarification and gentle filtration, it is bottled by gravity.

Tasting notes

Very bright straw yellow with clean greenish reflections.

Nose:

Direct and citrus entry marked by aromas of lemon peel, white grapefruit and subtle floral touches (orange blossom, jasmine). As it opens, notes of green almond, a slight hint of brioche and an unmistakable flint/chert minerality appear.

Mouth:

Balanced, precise and very agile. It presents a body of medium-high density with a crisp acidity that balances the ripeness of the fruit. The palate is clean, sapid and slightly saline in the aftertaste.

Food pairing

The combination of lightness, vibrant acidity and mineral touch makes this 1er Cru pair especially well with:

  • Scallop carpaccio seasoned with citrus and extra virgin olive oil, sea bass tartare or sashimi.

  • Fresh foie gras paired with lime zest and dates.

  • Grilled sole, turbot or scallops with citrus butter.

  • Artisanal Burgundy goat cheeses (Crotte de Chavignol) or young Comté.
