Olivier Leflaive Saint Aubin 1er Cru Combes Sud 2022 75cl.
The Olivier Leflaive Saint-Aubin 1er Cru Les Combes Sud 2022 is a white wine from the Côte de Beaune that combines the breadth and generosity of the vineyards bordering Chassagne-Montrachet with the freshness and limestone tension characteristic of Saint-Aubin.
The premier cru Les Combes is located at the bottom of the slope, right on the border where Saint-Aubin connects with Chassagne-Montrachet. This location gives it greater solar exposure and a fleshier and more structured profile than that of high-altitude plots such as In Remilly. The presence of a slightly deeper layer of clay on the limestone subsoil allows for better moisture retention during warm periods, providing volume and sweetness in the mouth. It was a solar, mature and very balanced campaign in Burgundy. It gave rise to whites with great abundance of fruit, with a silky texture but with enough natural acidity in the background to keep the wine fresh and stylized.

Tasting notes
View:
Pale golden yellow with greenish reflections and very bright sparkles.
Nose:
Expressive and mature. The aromas of white peach, golden apple, lemon peel and yellow flowers (acacia) stand out, complemented by nuances of fresh butter, toasted hazelnut and a soft chalky background.
Mouth:
Enter with volume, smoothness and amplitude. In the center of the mouth it is perceived as juicy and glyceric, supported by an integrated acidity that avoids any heavy sensation. Long and enveloping, leaving a memory of dried fruits, ripe citrus fruits and a saline and spicy nuance.
Food pairing
Thanks to its greater volume in the mouth compared to other Saint-Aubin premier crus, Les Combes 2022 allows for dishes with greater smoothness and structure:
-
Baked turbot or sea bass with hollandaise sauce, butter sole or confit cod.
-
Thermidor lobster, crayfish or scallops sautéed with cream.
-
Free-range or pularda chicken with morel and cream sauce.
-
Medium-ripened Comté (18-24 months) or Beaufort cheese.
