The Olivier Leflaive Puligny-Montrachet "Les Levrons" 2022 is a plot wine (lieu-dit) exceptional within the range of communal wines (Village) of the winery. It comes from the payment Les Levrons, located in the upper part of the Puligny-Montrachet slope—near the border with Meursault—. This location gives it a marked minerality, an airy freshness and an outstanding aromatic precision.

Being at the top of the slope, the Les Levrons vines enjoy great light and a leaner, calcareous soil. This translates into wines with a less heavy and much more tense, vertical and saline profile compared to the lower areas of the appellation. A round and solar vintage in Burgundy that brought optimal maturity to the Chardonnay, perfectly balanced by a vibrant natural acidity that preserves the characteristic freshness of Puligny.

Winemaking

Grapes: 100% Chardonnay

100% manual harvest of whole bunches collected in 13 kg boxes to protect the integrity of the grapes and prevent premature oxidation. Progressive and delicate pressing of whole bunches. The must goes through a cold static decantation process (débourbage) for 12 to 24 hours to clean it of coarse lees.

Spontaneous fermentation with indigenous yeasts in French oak barrels. The wine completes 100% of the malolactic fermentation naturally to gain complexity and soften the acidity.

Aging for 12 months in French oak barrels (with a moderate percentage of new wood of 15-20%) to respect the mineral identity of the estate, with bâtonnage controlled at the beginning. Transfer to stainless steel tanks during the last 3 or 4 months prior to bottling by gravity, allowing the citrus freshness to be consolidated and the whole to be assembled.

Tasting notes

View:

Very pale straw yellow, with a crystalline luminosity and very vivid greenish flashes that reveal its youth and its excellent aging projection in the bottle. Totally diaphanous, clean and bright appearance, reflecting the purity of the juice and the careful natural clarification process of the winery. Fluid, fine and constant tears. When you rotate the glass, it descends slowly and elegantly, anticipating a balanced volume in the mouth and a perfect alcoholic harmony.

Nose:

Of great aromatic purity that opens in a clean and airy way, without heaviness, exhibiting the elegance typical of the great Puligny payments. Absolute dominance of wild white flowers (orange blossom, acacia and jasmine), complemented by stone fruit and crunchy pip (Granny Smith apple, Limonera pear, white peach and a sparkling nuance of grapefruit peel). With a moderate use of barrel (15-20% new oak), the wood acts as a subtle frame. It displays delicate notes of fresh hazelnut, fine butter, brioche dough and a very light touch of pastry. The great protagonist of the nose is its deep calcareous background. Notes of chalk, flint stone (silex), flint and a subtle saline breeze emerge clearly, giving it a vertical dimension very characteristic of this high area.

Mouth:

Clear, incisive, precise entry with great liveliness that stimulates the palate from the first moment. It develops a silky, enveloping but light texture, where the breadth of the mature Chardonnay is supported by a markedly linear, tense and stylized structure. It has a backbone of vibrant citric acidity (reminiscences of lime, royal lemon and yuzu) that cuts through any hint of heaviness, providing an airy freshness and a millimetric balance between unctuousness and mineral verticality. Extraordinarily long and persistent finish, which lasts for several minutes, leaving a feeling of total cleanliness on the palate. Upon expiration, echoes of citrus zest, toasted nuts and a long, austere and saline memory of chalk and limestone reappear strongly, immediately inviting the next sip.

Food pairing

The star pairing for the Olivier Leflaive Puligny-Montrachet "Les Levrons" 2022 is the wild scallop carpaccio with a touch of oil of low acidity extra virgin olive, fleur de sel and lime zest, as well as grilled wild sole with a light emulsion of citrus butter and fine herbs.
