Tasting notes
View:
It has a dense and bright ruby red color with garnet highlights.
Nose:
Expressive and complex nose. Aromas of ripe black fruit (plum, cassis, blackberries) stand out, along with hints of wild red fruit, a background of thyme, leaf litter ( sous-bois ), and subtle spicy notes of oak.
Mouth:
It displays good concentration and volume on the palate. Firm, grippy tannins are accompanied by a fresh acidity that provides tension and classic Burgundian structure. The finish is long, flavorful, and mineral.
Food pairing
The perfect pairing for Olivier Leflaive Pommard 1er Cru Les Pézérolles 2018 requires dishes with good structural intensity and earthy nuances that complement the power of the 2018 vintage.
The Star Pairing: Duck Breast with Red Fruit Reduction. The duck's natural fat softens the wine's firm tannins. The Pinot Noir's acidity refreshes the palate, while the cassis and plum notes of the 2018 vintage blend perfectly with the sauce reduction.
It also combines perfectly with:
-
Medallions of roe deer or venison with red wine and mild pepper sauce, or roast pheasant.
-
Grilled sirloin steak served with wild herb butter
-
Boeuf Bourguignon
-
Beef or Iberian pork cheeks
-
Sautéed porcini and morel mushrooms with spring onions or integrated into a creamy risotto.
-
Poached egg on potato parmentier with black truffle shavings. The earthy compounds in the wine enhance the aroma of the mushroom.
