The Olivier Leflaive Meursault "Les Vireuils" 2023 is a category white wine Village Lieu-Dit coming from one of the plots with the highest altitude and mineral tension within the municipality of Meursault, characterized by its freshness, electric profile and aromatic precision.

Unlike the flat or low-sloping plots of Meursault—which provide fattier, more powerful wines—, Les Vireuils is located at the top of the hill (Haut de Côte). Its elevation exposes it to cold breezes, which slightly delays ripening and preserves very high levels of tartaric acidity. The layer of soil is very thin, forcing the roots of the vine to fracture the Jurassic limestone bedrock, which gives the wine a marked saline and flint imprint.

Winemaking

Grapes: 100% Chardonnay

The 100% Chardonnay grape from the Les Vireuils plot is harvested entirely by hand in small volume boxes to guarantee that the fruit arrives in optimal condition at the winery without breaking. The whole bunches go directly to the pneumatic press. Progressive pressing is applied to extract a clean must with crisp acidity. Subsequently, it performs a cold static decantation for 12 to 24 hours.

The decanted must is transferred to French oak barrels. Alcoholic fermentation begins spontaneously with native yeasts. It then performs full malolactic fermentation to soften the pronounced acidity of this altitude plot.

It is aged for 12 months in French oak barrels (with only 15-20% new oak). A very discreet bâtonnage is applied so as not to detract from the sharpness of the citrus and mineral profile of the area. The wine is extracted from the barrels and rests for an additional 4 months in stainless steel tanks to rebuild its acid tension and assemble the structure before light clarification, gentle filtration and bottling by gravity.

Very bright and crystalline straw yellow with vivid greenish reflections.

Nose:

Very sharp and vertical. Aromas of lime, Amalfi lemon peel, Granny Smith apple and elderflower dominate, accompanied by notes of wet chalk, struck flint and a subtle nuance of fresh hazelnut.

Mouth:

Direct, tense and energetic entry. The palate is linear, with an acidic backbone that balances the unctuous texture typical of barrel fermentation. Very long, clean and tense finish, where a saline vibration and a persistent memory of crisp citrus stand out.

Food pairing

The star pairing for the Olivier Leflaive Meursault "Les Vireuils" 2023 is the grilled scallops with citrus lemon butter or a sea bass carpaccio with lime zest and extra virgin olive oil. Unlike the traditional Meursaults from flat areas—more dense and buttery—, the altitude profile of Les Vireuils provides an incisive acidity and a saline limestone character that demands dishes where the purity of the marine product and the citrus freshness are the protagonists.
