The Olivier Leflaive Meursault "Le Meix Chavaux" 2022 is a category white wine Village Lieu-Dit of great prestige in the Côte de Beaune. It comes from an emblematic plot located to the west of the municipality of Meursault, renowned for producing wines that precisely combine the classic opulence and richness of the village with a linear and fresh mineral tension.

This lieu-dit is located on the slope facing Auxey-Duresses. By receiving fresh air currents from the combe (cross valley), it maintains lower night temperatures than the center of the town. This slows down the final ripening of the grapes, preserving a very vibrant and clean natural acidity. It was a warm, bright and very balanced campaign in Burgundy. In Le Meix Chavaux, the soil profile rich in limestone and the freshness of its microclimate allowed us to obtain grapes with a fantastic fruit concentration but without a hint of heaviness.

Winemaking

Grapes: 100% Chardonnay

The 100% Chardonnay grapes from the Le Meix Chavaux area are picked by hand in small perforated boxes to prevent the weight from breaking the grains before reaching the press.

The whole bunches are subjected to gentle pneumatic pressing to extract an aromatic must free of astringent tannins. Next, perform a débourbage (cold static decantation) for 12 to 24 hours to separate the heavier lees.

The clean must passes into French oak barrels where it ferments with native yeasts. It carries out complete malolactic fermentation (100%), transforming malic acid into lactic acid to gain volume and finesse.

The wine is aged for 12 months in French oak barrels. During the first months, moderate lees stirring (bâtonnage) is applied, which gives the glyceric and creamy texture typical of Meursault.

After wood, the wine is transferred to stainless steel tanks to rest for a final 4 months. This cold step helps to integrate the wood, polish the texture and set the salt profile before gravity bottling.

Tasting notes

View:

Pale golden yellow with greenish flashes and clean reflections of great luminosity. Crystalline and brilliant. It presents a uniform and fluid tear that reflects a well-integrated graduation

Nose:

Expressive and muscular nose. Notes of green apple, white peach and a subtle touch of candied orange peel and fresh citrus stand out. Elegant nuances of pastry, brioche dough, vanilla and fresh butter, the result of its 18-month aging with the presence of French oak. Background of chalk, beaten flint and dried fruits (toasted almond), reflecting the limestone of the upper sector of the plot.

Mouth:

Direct entry, energetic and with great relief in the mouth. Wide, enveloping and consistent. It combines the richness and density of Meursault with a silky texture that covers the palate. The ripeness of the fruit of the 2022 vintage is supported by a thread of lively acidity, coming from the cool microclimate of the combe that bathes the plot. High length finish, with firmness and character. The nuances of citrus zest reappear, a subtle saline impression and a clean and long-lasting calcareous mineral imprint.

Food pairing

The star pairing for the Olivier Leflaive Meursault "Le Meix Chavaux" 2022 is the pularda or poached free-range chicken with supreme morel sauce or a grilled lobster/crayfish on creamy risotto with citrus touches. The meaty, buttery structure of the wine embraces the richness of cream sauces and tender proteins, while the vibrant acidity of the Combe d'Auxey cuts through the fat and brings out the citrus and smoky nuances.
