The Olivier Leflaive Corton Grand Cru 2020 is a high-end red wine made from 100% Pinot Noir from the iconic Corton Mountain, the only Grand Cru appellation in the entire Côte de Beaune (Burgundy).

It comes from plots located on the Corton hill, where the soils combine Jurassic limestone with layers of clayey marl rich in iron oxides. The slope of the hillside and its southeast orientation guarantee perfect drainage and ideal sun exposure. Unlike the Premier Crus of Pommard or Volnay, Corton holds the Grand Cru designation due to the historical depth, mineral complexity, and exceptional longevity that its terroirs impart to the Pinot Noir.

The 2020 vintage is considered by critics to be one of the great modern Burgundy vintages. It was characterized by a warm, dry summer and an early ripening cycle.

Grapes: 100% Pinot Noir

The production of Olivier Leflaive Corton Grand Cru 2020 follows the most demanding winemaking protocols within the winery in Puligny-Montrachet, seeking to reflect the density of the 2020 vintage and the nobility of the only red Grand Cru in the Côte de Beaune.

The 100% Pinot Noir grapes are harvested by hand in small, perforated 13 kg crates to ensure the fruit arrives intact. At the winery, the bunches pass through two sorting tables, one manual and one optical, removing any imperfect or overripe grapes. The grapes are 100% destemmed to avoid vegetal tannins or bitterness from the stems. The whole berries are gravity-fed directly into the open fermentation vats, maintaining the integrity of the skins. Before the start of alcoholic fermentation, the must undergoes a pre-fermentation maceration at low temperature. This aqueous process allows the extraction of color, the aromatic intensity of fresh black fruit, and mineral precursors from the skin without dissolving harsh tannins.

Fermentation begins spontaneously with indigenous yeasts in temperature-controlled oak vats. For approximately 21 days, the extraction is meticulously tailored to the Grand Cru's profile.

Once fermentation is complete, the free-run wine is separated. The grape skins are then subjected to very low-pressure pneumatic pressing to obtain the press wine. Both components are then statically settled in tanks for 24 to 48 hours to remove the coarser lees.

The wine is transferred to traditional 228-liter Burgundy barrels. Malolactic fermentation occurs spontaneously during the spring. Aging lasts for 16 to 18 months, increasing the proportion of New French oak at 35% - 45% to complement the great concentration and structure of the Grand Cru .

The barrels selected for this Corton are blended in stainless steel tanks to homogenize the cuvée . The wine is bottled by gravity with light clarification and no aggressive filtration to preserve all its vitality and aging potential.

Tasting notes

View:

A very dark and intense ruby red color, with a high density. Deep violet highlights at the rim. Dense, slow-falling tears that hint at its ample body and well-structured volume.

Nose:

A dominant presence of cassis, wild blackberry, black cherry, and ripe black plum. Prominent notes of damp violets, black licorice, deep earth, undergrowth, and a subtle ferrous/calcareous mineral character characteristic of the Corton hillside. Noble spices (black pepper, clove), cocoa beans, cedar, blond tobacco, and hints of fine toast are perfectly integrated with the density of the fruit.

Mouth:

An imposing, fleshy, and enveloping entry. It impacts the palate with volume, firmness, and a Grand Cru structure. Large, prominent tannins, yet precisely crafted. They have an extra-fine grain that fills the mouth without being aggressive, supported by the concentration of the 2020 vintage. The natural acidity of the 2020 harvest is surprisingly fresh and lively. It articulates the wine's power, contributing linear tension, elegance, and an upright profile. Extraordinarily long and persistent. It leaves an unforgettable impression of cassis liqueur, pepper, graphite, and a saline and mineral background.

Food pairing

The structure of a Grand Cru red wine requires intense red meats with a high protein and fat content to soften the firmness of its tannins:

  • Loin of Venison or Roe Deer accompanied by a reduction of black fruits and allspice.

  • Beef tenderloin on toasted bread, topped with a slice of fresh grilled foie gras and shavings of black truffle.

  • Extremely aged T-bone steak, grilled over charcoal with coarse sea salt.

  • Lièvre à la Royale (Royal Hare)

  • Boeuf Bourguignon

The earthy, vegetal and mineral profile of Corton Hill harmonizes naturally with seasonal mushrooms:

  • Veal sweetbreads glazed with morels

  • Creamy risotto with poultry stock and freshly grated truffle or a poached egg on truffled parmentier.
