Olivier Leflaive Chassagne Montrachet Pierres 2022 75cl.

Olivier Leflaive Chassagne Montrachet Pierres 2022 75cl.

The Olivier Leflaive Chassagne-Montrachet "Les Pierres" 2022 is a cuvée of category Village specially selected by the house to highlight the most mineral, straight and stony facet of the terroir of Chassagne-Montrachet. It comes from plots whose soil stands out for its scarce layer of soil and a very high concentration of limestone, which gives the wine a distinctive tension and freshness within the appeal. Unlike the classic Chassagne-Montrachet Village (which seeks the fattier, broader and fleshier profile of the appellation), the cuvée "Les Pierres" groups together vineyards with soils lean with abundance of rock. The result is a wine with a more linear, tense and sparkling profile. It was a reference vintage in Burgundy for the perfect balance between fruit ripeness and lively acidity. The vintage provided clean, very healthy fruit with a great capacity for wood integration

Winemaking

Grapes: 100% Chardonnay

100% manual harvest in small perforated boxes to preserve the integrity of the Chardonnay grains and prevent oxidation before pressing.

Gentle pressing of whole clusters in a pneumatic press. Subsequent débourbage (cold decanting) for 12 to 24 hours to clean the must of coarse lees.

Alcoholic fermentation with native yeasts in French oak barrels. Perform 100% complete malolactic fermentation naturally.

Aging for one year in barrels with a moderate percentage of new oak so as not to overshadow the mineral imprint. Moderate bâtonnages are applied at the start to provide structure.

The wine goes into stainless steel tanks to rest before bottling. This phase consolidates the acidity, refreshes the profile of the wine and integrates the batches.

Tasting notes

View:

Very clean, bright and crystalline straw yellow, with slight greenish reflections that reflect the freshness and youth of the 2022 vintage. Totally transparent and luminous, with a thin and agile tear that suggests a fresh, direct and balanced alcohol mouth profile.

Nose:

Marked stony personality from the first moment. Notes of limestone, flint, chalk and salt breeze stand out, characteristics of the lean soil of the Les Pierres payment. Citrus and crisp white fruit profile, dominated by green apple, Limonera pear, lime peel and yellow grapefruit, nuanced by soft hints of orange blossom and hawthorn. Very integrated and discreet due to its content of use of new oak (15-20%). A subtle nuance of green hazelnut, fresh butter and a light touch of toasted bread emerges.

Mouth:

Precise, clean, incisive and electrifying input. Tense, vertical and very fluid. It offers a contained and elegant volume; Unlike the traditional Chassagne-Montrachet (which stands out for its meatiness), this cuvée prioritizes agility and dynamism over a vibrant backbone of citric acidity. Excellent balance between fruit, clean acidity and chalky touch on the palate. Long, austere, markedly saline and refreshing finish. It leaves a persistent memory of citrus zest, chalk and a long mineral nuance that immediately invites you to continue drinking.

Food pairing

The star pairing for the Olivier Leflaive Chassagne-Montrachet "Les Pierres" 2022 is the grilled royal crayfish with fleur de sel or a wild scallop tartare with lime zest. Unlike traditional Chassagne-Montrachet (which calls for creamy sauces and white meats due to its broad, fatty profile), the cuvée Les Pierres stands out for its marked mineral tension, incisive acidity and profile. rocky, which requires pure, iodized marine ingredients with a delicate texture without heavy sauces.

  • King crayfish or grilled red prawns

  • Scallop tartar or carpaccio with extra virgin olive oil and lime

  • Specialty oysters (e.g. Gillardeau or Amélie)

  • Grilled sole with fleur de sel and citrus butter.

  • Wild sea bass ceviche or carpaccio

  • Soft goat cheeses (Crottin de Chavignol or Chabichou du Poitou)
