The Olivier Leflaive Bourgogne Les Sétilles 2022 is one of the regional category white wines (Bourgogne AOC) most famous and appreciated in Burgundy for offering the finesse and elegance of iconic towns such as Puligny-Montrachet and Meursault at an excellent quality-price ratio.

The term "Les Sétilles" refers to the cadastral name of the area in the town of Puligny-Montrachet where the headquarters of the winery is located. Much of the grapes come from classified plots practically at the gates of the Puligny-Montrachet and Meursault appellations, grown on soils clay-calcareous.

Grapes: 100% Chardonnay

The preparation of Olivier Leflaive Bourgogne Les Sétilles 2022 combines traditional Burgundian winemaking techniques with a precise assembly that seeks to balance fruity freshness with the richness and texture of wood aging.

The 100% Chardonnay grapes are harvested in more than 60 selected plots, located mainly in the municipalities of Puligny-Montrachet and Meursault. The harvest is carried out seeking the optimal point of aromatic maturity without losing acid tension.

Upon arrival at the winery, the grapes undergo progressive and gentle pneumatic pressing to extract the must without breaking the seeds or extracting bitter tannins. The wort then undergoes a débourbage (cold static decantation) for 12 to 24 hours to separate the coarsest impurities.

To achieve a complex structure without saturating the fruit, the alcoholic fermentation is divided into two different tanks: 60% - 65% in French oak barrels and 35% - 40% in stainless steel tanks at a controlled temperature to preserve the crisp acidity and primary aromas.

The wine undergoes complete malolactic fermentation, converting malic acid into lactic acid to gain softness. During aging on its fine lees, periodic stirring is applied during the first months to give the wine greater volume and smoothness on the palate.

The components raised in wood and steel are assembled in stainless steel tanks, where they rest together for about 2 months to harmonize. After light filtration and fine clarification, the wine is bottled ready for marketing.

Tasting notes

View:

Very bright straw yellow with clean and intense greenish and golden flashes. Totally clear and crystalline. It presents a fine and agile tear that spreads evenly throughout the glass, reflecting a well-balanced graduation and body.

Nose:

Expressive and highly elegant nose. Notes of crisp white fruit such as green apple, white peach and pear stand out, combined with citrus nuances of lemon peel, grapefruit and white flowers such as orange blossom and acacia. It shows memories of artisanal butter, baked brioche and dried fruits, the result of working with fine lees and the slight percentage of new oak (10%). Elegant background that evokes chalk, limestone and flint, revealing the proximity of the vineyards to the famous appellations of Puligny-Montrachet and Meursault.

Mouth:

Fresh, direct and vibrant entry. It appears enveloping, full and satiny. It has a pleasant and creamy texture that covers the palate without being heavy. The juiciness of the ripe fruit from the 2022 vintage is supported by a backbone of crisp and electric acidity that gives it dynamism and tension. Final of medium-high length, notable for its category of Bourgogne Regional. The fresh citrus nuances reappear along with a saline touch and a slight aftertaste of dried fruits that invites you to take the next drink.

The star pairing for the Olivier Leflaive Bourgogne Les Sétilles 2022 is grilled sea scallops with hazelnut butter or sea bass a la meunière.
