PREPARATION
Grapes: Pedro Ximénez and Moscatel de Alejandría.
Pisco Control is the only pisco that is distilled three times in copper stills. The particular conditions of the region, the warm, dry climate and light, stony soil, characterize the particular taste of Pisco Control. Distillation is at the heart of the production process, in which the water contained in the wine is separated from the alcohol. The distillation process lasts around 10 hours and according to Chilean law it is discontinuous. This means it should only be made in copper stills. Through this, they can separate the head, heart, and tail. The heart or body is the base of pisco alcohol.
TASTING
View: Transparent, crystalline, clean. It has a medium density.
Nose: Herbaceous, fresh aroma, with a citrus touch combined with grapes, peach and sweet notes of vanilla and white flowers.
Mouth: Smooth, round and creamy flavor, with a long and clean finish.
