PREPARATION

Amaro Averna is made from the infusion of herbs, which is carried out in Caltanissetta, in the center of Sicily, according to the traditional recipe that has remained unchanged since 1868 and that includes a long infusion process, which is one of the most unique and authentic that exists today. The process begins by combining specially selected herbs, roots and natural spices. Then, all the ingredients, such as pomegranates and essential oils of bitter oranges and lemons, are weighed, ground, and finally blended and infused with pure alcohol to obtain an intense aromatic blend. The liquid is then mixed with water and sugar until it reaches the proper alcohol content, and is then filtered and mixed with more of the same ingredients. The mixture is then allowed to sit until all the ingredients are completely mixed. Once the ideal intensity of flavor and aroma has been reached, it is ready to be bottled.
