Description
PREPARATION
Grapes: 100% Sauvignon Blanc
They select the best Sauvignon Blanc grapes from the vineyards and harvest them at night to take advantage of the freshness and avoid oxidation during the harvest to the winery. They have hopper trailers that go directly from the vineyard to the winery. The harvest is received throughout the night in the winery and they proceed to destemming and crushing. They apply liquid CO2 at -30°C to cool the harvest to 10°C online and prevent oxidation in the must. Macerate for 12 hours at a temperature of 10°C and gently press with a pneumatic press. Only the clean must is fermented at a temperature of 16°C, adding a selection of yeasts.
TASTING
View:
Golden yellow in color with greenish reflections.
Nose:
High intensity, with hints of ripe tropical fruit on a citrus background and slightly milky finish.
Mouth:
Good palate, fruity, refreshing, with persistence and lively acidity. Recommended temperature: Serve at 8ºC.
