Winemaking
Grapes: 98% Grenache, 2% Cariñena
La Baixada is a 1.3 hectare plot located in the town of Gratallops (El Priorat). It contains vines with an average age of 20 years that are planted on terraces 300 meters above sea level with very steep slopes and on soils composed of slate, the typical shale soil of the area. Organic farming is practiced with biodynamic treatments and following the lunar cycles in each of the processes. Once the Álvaro Palacios La Baixada grapes are manually harvested, they are destemmed and lightly trodden. Next, they ferment with native yeasts in oak vats with 55 days of maceration. Finally, the wine ages for 20 months in French oak barrels.
