  Xarel·lo single-varietal cava made by Juvé & Camps in Sant Sadurní d'Anoia, one of the most prestigious wineries in terms of the production of long-aged cavas. With the classification of Cava de Paraje Calificado, a distinction that very few wines can enjoy today. In the highest part of the Espiells estate is La Capella, two hundred meters above sea level. It is a unique vineyard, with austere and shallow terrain. The magnificent conditions of the Penedés favor the production of xarel·los in Espiells. Thus, a grape with a lot of character and nerve is obtained, something essential for this long-aged cava. PREPARATION

Grapes: 100% Xarel·lo   It is a premium category from a unique location with vineyards of a minimum of 10 years and very limited production that is vinified in the winery itself and undergoes a minimum aging of 36 months. The grapes come from a single estate, La Capella, of just over 7 hectares planted in 1972 on calcareous soils. The harvest is carried out completely manually, and it is transferred to the winery in small boxes that guarantee the perfect condition of the grapes upon arrival at the winery. The grapes obtained go through a strict selection process. Once selected, gentle pressing is applied. Once the free-run must is obtained, it is left to decant for 24 hours before adding specific yeasts that enhance all the aromas of the Xarel·lo.

TASTING

View: Of a beautiful golden color.

 

Nose: Deep and complex aromas that surprise. Intense notes of stone fruits (peach, apricot, loquat...) coexist with aromas of brioche and butter. Little by little, as the cava opens, a faint background of nuts and curry appears, as well as the light touch of toast, typical of the long aging.

 

Mouth: In the mouth it is very creamy, structured and incredibly fresh. Its persistence is remarkable and leaves us with memories of dried apricots, nuts and fine pastries.

 

Recommended temperature: 10º C.
