Winemaking
Renowned for her meticulous methods, François Voyer uses only Ugni Blanc grapes harvested from her 28 hectares of vineyards, located in Grande Champagne. The area between the vines is allowed to grow as wild meadow plots, meaning the vines have to work a little harder to produce tastier fruit. It is one of the last Cognac houses to continue distilling its own production. The process begins with fermentation, for which certain strains of yeast are selected based on certain climatic conditions. After vinification, the spirit is distilled very slowly in traditional Charentaise stills. Interestingly, Voyer distills on the lees, which produces a richer, more fragrant and rounded final product. All their cognac is double distilled, and the heart of the spirit is selected in the traditional way, by the sense of smell of its distillers! This cognac VS Grande Champagne is aged for a minimum of 2 years in Limousin oak barrels with a medium toast.
Tasting notes
View: Beautiful golden color.
Nose: Sweet and floral full of aromas of vanilla and lime, enhanced by an aroma of white flowers.
Mouth: The attack is direct, persistent on the palate, fresh and fruity that presents notes of green apple, grapes, light dried fruits, bright wood, a little spice, yeast pastry, vanilla, a touch of barrel charcoal and ripe fruits from the orchard (peaches and dried apricots) that lead beautifully to a floral finish.
