Winemaking
Grapes: 100% Malvasia
The production of Flor Malvés wine from Finca Collado recreates the traditional techniques of dry white wines of yesteryear, adapted to modern winemaking.
The grapes are hand-harvested in early September. After harvesting, they are stored for 7 days in a cold room at 1°C before processing. The grapes are then pressed directly into a vertical press. Only the first juice (free-run juice) is extracted, seeking the cleanest and purest juice without over-pressing the skins.
The must ferments for about 12 days at a temperature of 15°C, preserving the finesse and varietal nuances of the Malvasia grape. Once fermentation is complete, the wine is aged in tanks on its lees for 9 months. This process emulates the ancient practice of protecting wine from oxidation and is responsible for giving it its great body, silky texture, and pronounced aromas of pastries and fine baked goods.
Tasting notes
View:
Pale yellow color with subtle golden highlights, clean and bright.
Nose:
Very expressive on the nose, highlighting the aromas derived from its time on lees (reminiscent of pastry, fine buns and a characteristic touch of apple pie), in harmony with mineral nuances.
Mouth:
On the palate, it stands out for being extremely dry, with a silky texture and a smooth, enveloping mouthfeel. It is a very food-friendly wine, with structure and a long, persistent finish.
Food pairing
Due to its distinctly dry character, creaminess, and gastronomic profile, it pairs perfectly with:
-
Fish and seafood: Baked fatty fish, cooked or grilled seafood.
-
Rice dishes: Seafood rice, fish rice, or soupy rice dishes.
-
Snacks and cheeses: Mediterranean salted fish, nuts and semi-cured cheeses.
