Description
PREPARATION
Grapes: Pinot Noir, Chardonnay and Pinot Meunier.
For the production of Drappier Carte d'Or Champagne exclusively the first juice from the pressing of the harvest is used, carried out in mechanical presses with weak pressure. Gravity is used in order to avoid racking, which prevents oxidation, and then natural decantation takes place, before moving on to the low-temperature alcoholic fermentation process, which lasts around two weeks. Next, a second complete and natural malolactic fermentation takes place. No filtering is performed. 5% of the wines are aged in foudre for 1 year to enrich the cuvée. The Drappier vineyard extends over 100 hectares and represents the special advantage of the house, with particularly well-exposed and extremely calcareous plots, located for the most part around Urville, where Pinot Noir, for the most part, finds its most beautiful expression and allows the production of very elegant aromatic wines.
