Doorly's XO Gold Barbados 70cl.

Doorly's XO is made at the Foursquare Distillery, in Barbados, using a traditional process combined with modern technology. Sugar cane molasses is used as a base for fermentation. The molasses is mixed with water and selected yeasts to produce an alcoholic must. Although Foursquare doesn't publish all the details, it follows the traditional Barbadian style of controlled fermentation.

Part of it is distilled in a column still, which makes the rum lighter and cleaner. Another part is distilled in a pot still or traditional alembic, which gives the rum more aromas and more body. Subsequently, both distillates are mixed to obtain a balance between smoothness and complexity.

The rum initially ages in ex-bourbon American oak barrels for approximately 6 years and then undergoes a second maturation in barrels that previously contained Oloroso sherry wine. This finish usually lasts between 1 and 3 years.

Dark amber color with copper reflections. Bright and clean.

Nose:

The first impression is elegant and balanced, with a predominance of vanilla, caramel and ripe banana. Aromas of raisins, dried fruits, walnut and almond from the Oloroso Sherry barrels, with light touches of toasted oak and cocoa.

Mouth:

Soft and round entry, with moderate sweetness without being cloying. Flavors of vanilla, caramel and light honey. Hints of cocoa, cinnamon and nutmeg. Medium to long finish with persistence of vanilla, nuts and cocoa. Its finish is dry compared to what is usually found in many commercial rums.
