Grapes: 100% Pinot Noir
The production of Domaine Ponsot Chapelle-Chambertin Grand Cru 2023 follows one of the purest, most radical and unique protocols in all of Burgundy. Under the technical direction of winemaker Alexandre Abel and Rose-Marie Ponsot, the main objective is to capture the exact essence of the terroir without artificial interventions or oak make-up.
Domaine Ponsot is usually one of the last wineries to harvest on the Côte de Nuits. In 2023, they waited for the optimal point of phenolic maturity, carrying out an exhaustive manual selection in the vineyard itself. Unlike other producers in the area who use high proportions of whole bunch, Ponsot usually destems the vast majority of the grapes to highlight the purity of the clean fruit. Fermentation takes place in old open wooden vats using native yeasts.
The wine was aged 100% in old French oak barrels, many of which are between 10 and up to 50 years old. The wine remains in the barrel for approximately 24 months, resting on its lees.
It is bottled without clarifying and without filtering, preserving all its tannin structure and natural density.
A high-tech synthetic stopper (ArdeaSeal) is used instead of traditional cork, eliminating the risk of contamination by TCA (cork taste) and guaranteeing perfectly controlled oxygen permeability for decades.
Tasting notes

It presents a beautifulbright ruby red color with garnet nuances on the edge, with a medium layer and excellent transparency, characteristic of wines made without filtration or clarification.
Nose:
It stands out for itscaptivating fruity and aromatic purity, where the absence of new oak allows the terroir to express itself with complete freedom, intense aromas of fresh and wild red fruit, complex touches of violet petals, dried rose, moss and a characteristic background of chalk and limestone. Subtle nuances of white pepper, red tea and licorice.
Mouth:
It enters the mouth with great elegance, fluidity and silkiness. It is a medium to full-bodied wine that stands out more for its tension, grace and finesse than for heavy extraction. Incredibly fine-grained, polished and well-molded tannins, accompanied by a lively and refreshing acidity that brings great energy to the whole. Long, precise and deeply mineral finish. It leaves a persistent memory of crisp red fruit, withered flowers and a saline/calcareous touch in the aftertaste.
