Under the direction of Master Distiller Viridiana Tinoco, this distillate fuses the technical rigor of tequila with ancestral cooking techniques typical of the universe of mezcal, achieving an elegant and subtle smoky profile without the need to pass through the barrel.

The presentation of this special edition of Blue Class is an authentic work of art that transcends the traditional concept of the bottle, paying visual and conceptual tribute to the transformative power of fire, earth and the artisanal origin of the distillate. The design of the decanter masterfully fuses different materials and textures to tell the story of its creation. It has a dark-toned ceramic base with a rough feel that directly evokes the volcanic stones used in the traditional underground pit for slow cooking of the agave. The upper translucent section contrasts with the ceramic, paying an elegant visual tribute to the delicate smoke. and ethereal that characterizes this unripened white tequila. Winemaking

Under the direction of Master Distiller Viridiana Tinoco, this distillate fuses the technical rigor of tequila with ancestral cooking techniques typical of the universe of mezcal, achieving an elegant and subtle smoky profile without needing to be barrel-aged.

The process begins with a 100% Weber Blue Agave grown in the rich mineral soils of the region from Los Altos de Jalisco. The plants are rigorously selected after reaching their optimal ripening point to guarantee an optimal concentration of sugars and aromatic compounds.

Unlike the usual methods in tequila production (masonry ovens or autoclaves), this edition recovers a method of ancient origin. The agave piñas are placed in a well dug directly into the ground, conditioned with firewood and volcanic stones. During slow cooking, the flames barely touch the agave; are volcanic stones incandescent ones that emit a uniform and enveloping heat. class="ng-star-inserted">

This subterranean heat transfer process imbues the agave sugars with a complex, deep and balanced smoky nuance ("where the smoke whispers rather than invades"). _ngcontent-ng-c3518082845="" _nghost-ng-c3457631168="" class="ng-star-inserted">

Once cooking in the pit is complete, the agave pineapples undergo a manual tearing and grinding process to release all the honeys and fibers impregnated with earthy and volcanic aromas.

The resulting juices and fibers are transferred to the fermentation tanks, where a proprietary and wild yeast is inoculated specifically grown from strains selected in the distillery's own fields. This step ensures the unique microbiological identity of the house and a perfect integration of the primary aromas of the agave.

The fermented liquid undergoes a rigorous double distillation process in custom designed copper stills. This phase is key to purifying the alcohol, eliminating unwanted impurities and rounding out the texture without masking the mineral and smoky complexity obtained in the earth. class="ng-star-inserted">

Tasting notes

Bright, completely crystalline liquid with subtle silvery flashes and straw reflections. Full body, dense and with a fatty texture that denotes its great quality and purity. class="ng-star-inserted">

Nose:

Frank notes of sweet cooked agave intertwined with a fine, clean and elegant smoke reminiscent of wood ash and wet earth. Nuances of fresh fruit such as red apple and plum, complemented by citrus touches and subtle herbal and mineral hints.

Mouth:

Entrysumptuous, soft and velvety on the palate. The natural sweetness of the agave blends perfectly with light touches of fresh lemon, spicy nuances (green pepper) and a perfectly integrated smoky background that does not mask the freshness of the distillate. It has a clean mineral core that provides liveliness and depth in the middle of the tasting. Extraordinarily long, warm and refined. Leaves a lingering memory of sweet agave and a touch of silken smoke (silky smoke) accompanied by a soft mineral note that remains pleasantly on the palate.
