Château d'Yquem 2011 is one of the great sweet wines in the world. It comes from the Sauternes appellation, in Bordeaux, and is made mainly with Sémillon and Sauvignon blanc. The 2011 vintage stands out more for its elegance and precision than for its exuberance.
One of the legendary characteristics of Yquem is its longevity. It can be drunk today with great pleasure, but it can also evolve over several decades. Various critics place its optimal window between 2020 and 2050, and even beyond in ideal conservation conditions.

Winemaking
Grapes: 80% Sémillon, 20% Sauvignon Blanc
The harvest is carried out completely by hand, plot by plot, selecting only the grapes that have reached the perfect degree of ripeness. Once in the winery they undergo gentle pressing. Fermentation takes place in oak barrels, a slow process that can last for weeks or months due to the high concentration of sugar. The wine ages approximately 30 to 36 months in new French oak barrels. During this period, racking is carried out periodically.

Intense golden color with amber reflections and bright sparkles. With fine and persistent tears.
Nose:
Very complex and expressive, with layers that open in the glass with aromas of apricot, peach, pineapple and passion fruit. Notes of acacia honey, saffron and sweet spices. Hints of vanilla and white flowers.
Mouth:
Unctuous and silky entry. Intense sweetness but perfectly balanced by vibrant acidity. Creamy and concentrated texture. Remarkable balance between power, freshness and finesse. Very long, persistent and precise finish. Memories of honey, apricot, candied orange and spices. Of aromatic persistence that can last more than a minute.
Food pairing
The ideal accompaniment for this wine can be foie gras, Roquefort cheese or long-lasting blues. Lobster or scallop with slightly sweet sauce. It can be accompanied by desserts such as apricot tart.
