Description
Winemaking
Grapes: Macabeo, Xarel·lo and Parellada.
The grape varieties for the production of Freixenet Brut Barroco cava are vinified separately and exclusively flower must is used. It is left to rest for 24 hours so that any particles it may contain precipitate. The must then passes into stainless steel tanks to proceed with fermentation, which takes place at a controlled temperature of between 14 and 16ºC. This fermentation lasts for 10-12 days. Subsequently, racking is carried out to, finally, proceed to make the final blend. The aging takes place in rhyme for more than 24 months.
Tasting notes
View: Lemon yellow color, clean and bright, fine bubbles with good carbon dioxide release.
Nose: Intense aromas of aging, citrus aromas (lemon), sour apple, combined with subtle notes of tropical fruits (pineapple) and backgrounds of dried fruits, with light hints of pistachio.
Mouth: Good structure in the mouth due to prolonged aging in the bottle but with fresh and soft notes which gives it its particular bouquet.
Recommended temperature: 6-8º C.
Food pairing
Accompany it with soupy rice, lightly seasoned salads, pica-pica, and puff pastry desserts.
