Cabeza Lobera 9 months, a wine made by Antonio Serrano with selected grapes of the Tempranillo variety with the Ribera del Duero Designation of Origin.
Antonio Serrano has decided to embark on an ambitious winemaking project based on contrast. Originally from Villarrobledo, one of Spain's largest wine-producing regions, the winemaker and viticulturist has brought his experience and technical expertise to Villálvaro, in the province of Soria, to establish a project there that champions the authenticity of the most extreme Ribera del Duero.
In that transition from the plains of La Mancha to the high plateau of Soria, from productive abundance to natural restraint, the philosophy of Antonio Serrano Viticultor is condensed, an initiative that finds its most direct expression in the Cabeza Lobera wine.

Grapes: Tempranillo
This red wine, the most "simple" of the project's initial range, serves to understand the soul of this Soria venture: the pursuit of purity, absolute respect for the environment, and the desire to interpret the landscape rather than dominate it. Made with Tempranillo (and other old varieties found in the vineyard) and aged for nine months in French oak barrels, Cabeza Lobera accurately reflects the character of a territory with poor soils, an altitude of over 900 meters, and an extreme climate, where each harvest is a triumph.
Tasting notes
View:
Bright cherry red with violet undertones. Clean and of good intensity.
Nose:
Initially balsamic, with hints of mountain mint. It quickly opens up to ripe, mature fruit, both wild black and red. Subtle citrus notes and exotic spices (ginger, cinnamon) emerge. With aeration, the redder side develops (creamy strawberries) and the licorice root becomes more defined. A light mineral sensation is enhanced by the judicious use of oak.
Mouth:
Direct on the palate, lively, with good acidity and vibrancy, spicy fruit as the dominant note, and very fine, clean toasty aromas. Ripe yet crisp tannins. With some length, structure, and good definition.
Food pairing
Ideal for grilled red meats and roast lamb. Dishes with mushrooms and traditional stews. Excellent with aged cheeses.
