PREPARATION
Grapes: Pinot Noir and Chardonnay.
Besserat de Bellefon Extra Brut is a cuvée resulting from the unique and very specific Champagne production method that has been perpetuated by Besserat de Bellefon since 1930, made with grapes from the best towns in the D.O. Champagne; mainly Mesnil-sur-Oger, Mareuil, Bisseuil, Mailly and Rilly-la-Montagne. It consists of adding less “liquor de tiraje” (a mixture of sugar, yeast and must) at the time of bottling, which creates a lighter and more transparent effervescence formation. The mousse is soft, creamy and persistent. A distinctive feature of this Extra Brut is the absence of malolactic fermentation. It is aged for 8 years on lees, with a minimum of 2 years passing from disgorgement.
TASTING
View: Intense yellow color, it draws fine bubbles with a delicate creamy cord.
Nose: It begins reservedly to give way to an opulent aroma, with smoky, toasted touches and great elegance, aromas of currants and macadamia nuts.
Mouth: With a strong character, delicately fruity, and with a subtle, polished astringency. Persistent and complex finish.
Recommended temperature: 8-10ºC.
