Preparation: The cod with which this preserve is made is obtained by trawling in Iceland and an artisanal process, without preservatives or additives and only extra virgin olive oil in its preparation. The cod necks are desalted slowly and cold to the right point, giving them the smoothness and mild flavor that characterizes them, and they are cooked without haste along with the raisins, which provide a slight sweet touch, contrasting with the flavor of the cod. It is packaged manually.
