The Ayala Brut Majeur is the banner and the maximum expression of the style of the Maison Ayala, a historic winery founded in 1860 and located in Aÿ (in the heart of the Champagne, owned by the Bollinger Group since 2005). It is characterized by its elegance, purity, freshness and a low sugar profile.

It is a classic blend of the three great varieties of the region, highlighting the prominence of Chardonnayapprox. 40-55%, Pinot Noir, Pinot Meunier and reserve wines.

It is made from a selection of more than 70 crus from the main areas of Champagne (Côte des Blancs, Montagne de Reims, Marne Valley, etc.).

Winemaking

Grapes: Chardonnay, Pinot Noir, Pinot Meunier, reserve wines.

It is vinified in small stainless steel tanks (more than 120 independent vats), separating each plot and variety to preserve the identity of the terroirs.

It undergoes a long aging on its fine lees in the bottle for a minimum of 3 years in the winery's underground cellars.

It is a dry style wine with a low dosage of approximately 6 to 7 grams per liter, which enhances its mineral tension and natural purity.

Tasting notes

View:

Pale gold color with silver reflections, accompanied by a fine, lively and very persistent bubble.

Nose:

Fresh, expressive and delicate. Aromas of citrus fruits (lemon, orange peel), white fruit (peach, pear) and floral notes (orange blossom, acacia) predominate, subtly complemented by memories of fine pastries resulting from its aging.

Mouth:

Live and precise attack. On the palate it develops a creamy texture that evolves towards a tense, fresh finish with a marked saline and very persistent mineral note.

Food pairing

Excellent as a high-altitude aperitif. It is an excellent accompaniment to seafood, baked or grilled white fish, sushi, soft poultry and creamy cheese boards.
