El Tros Nou is a unique vineyard located in one of the coldest areas of the D.O Cava: the Serralada de Prades. Its most notable feature is its licorella soils that give the Pinot Noir a very characteristic mineral touch. This cava brings new organoleptic nuances to the usual expression of cavas based on Pinot Noir.

Winemaking
Grapes: 100%Pinot Noir.
Ars Collecta Paraje El Tros Nou is a cava made by hand, selecting and harvesting the highest quality grapes from the Estate. Night harvest at the beginning of August, taking advantage of the cool temperature and avoiding the oxidation of the grape aromas, manually and in small boxes. The grapes were transported in a refrigerated truck to their micro winery where this range of cavas is made: El Celler Jaume. Upon arrival, the grapes are selected, cooled and pneumatic pressed to avoid staining the must with the skin and thus obtain a Blanc de Noirs. The must fermented in small tanks at 17°C. Tros Nou is a cava that has aged slowly for more than 90 months at a constant temperature of 14°C between the thick walls of what was the first cellar in Codorníu.
Tasting notes

Straw yellow with golden and salmon reflections with elegant and delicate bubbles.
Nose:
Fruity notes that remain with all their potential in the aroma and among which red fruits (cherries and raspberries) and green notes stand out. When opened in the glass, mineral and spicy notes (pink pepper) appear, which are pleasant and delicate reminders of its aging and origin.
Mouth:
Powerful in the mouth, intense and tasty, with abundant aromas of red fruit, fresh and lively. With an elegant creamy bubble and a long fruity and mineral aftertaste in which candied, smoky and delicate wood notes appear.
Food pairing
We can enjoy them in a generous range of pairings, such as seafood (prawns, crayfish, scallops, barnacles), fish with mild sauces and prepared raw (sashimi, sushi, carpaccio or tartare), cod, monkfish, all types of rice, lightly seasoned and smoked meats. It is also recommended to taste it alone to enjoy the wide range of records that this cava offers and with gastronomic appetizers.
