Preparation: The bocarte arrives at the markets during the spring Coastal season and after a very laborious process of maturation in the cellar for 6 months that determines the intensity of the flavor and the texture of the anchovy, they are filleted by hand, one by one, cleaning them with great care and skill due to their great fragility, and they are packaged in olive oil. All Real Conservera Española products contain fish and seafood exclusively from the Galician Rías, whether from the Atlantic Ocean or the Cantabrian Sea. Using only the best vegetables, captured in the field when they are in their best season and at the optimal point for their production. They are made in an artisanal way, taking care of the canning and packaging by hand, selecting and placing each piece in the can to guarantee the best presentation at the time of tasting.
