PREPARATION
Grapes: Chardonnay.
The aging time on the lees of Vollereaux Blanc de Blancs Brut is 4 years. Maison Vollereaux has 40 hectares of vineyards in Coteaux Sud d'Epernay in the Marne Valley. The family pays special attention to the cultivation of the vine, respecting natural balances. At the time of harvest, all the technical means are used to safeguard the natural specificity of the terroirs and musts resulting from pressing, which is why they combine tradition and modernity through the use of two modern presses and one traditional press. Only thermoregulating stainless steel vats are used to separate the must from the grapes. The blending process is a true ritual at the end of winter for Vollereaux, guided by his experience, his instinct and the ancestral know-how inherited from his ancestors, Franck creates the various Vollereaux blends.
TASTING
View: Pale yellow in color with greenish reflections, it is adorned with fine bubbles that join the surface to create a fine and persistent crown.
Nose: Very pleasant with delicate aromas of a dried lime infusion interspersed with mineral and airy notes.
Mouth: In the mouth, after a frank and acidic attack, we discover a round and flexible wine.
