PREPARATION

Grapes: Viura and Palomino.

The Monopole Clásico 2017 white wine is made from a mixture of grape varieties that, once they reach their optimal point of ripeness, are harvested manually and come from their own vineyard in Villalba de Rioja. The grapes are gently pressed and, just as in the 60s, the must is taken to a concrete tank for static settling. The alcoholic fermentation is carried out in stainless steel tanks and once this process is complete, the wine goes along with the fine lees to complete its aging in used barrels and butts that have previously contained several wines for about 8 months, with periodic tastings being carried out. The uniqueness of this wine lies in the contribution of a small amount of chamomile, which has been made according to the traditional method followed by biological aging under a veil of flower. The 2017 harvest was marked by drought and frost that affected much of western Europe. In Rioja the year began with higher temperatures than usual, which led to an advance in the vegetative cycle.

TASTING

View: Lemon yellow color with medium intensity.

 

Nose: Its complexity stands out with a wide range of descriptors such as chamomile flower, apple, pear, almond memories, bakery aromas, mineral notes...

 

Mouth: Its entry into the mouth is pleasant, with a broad, unctuous and velvety palate with a long, fresh and saline finish.

 

Recommended temperature: 8-10º C.
