Description
PREPARATION
Grapes: 80% Tempranillo, 15% Cabernet Sauvignon, 5% Merlot
Only the best grapes from the vineyards that the winery owns on the slopes of the Duero River are used in its production. At an altitude of over 800 meters, the vase vines that are more than 90 years old take root deeply in the clay-calcareous soils, trying to cling to the terroir to be able to safely face the harshness of the continental climate. The country's red grapes, Cabernet Sauvignon and Merlot, do not receive a single drop of water artificially or any mineral fertilizer, so they depend largely on nature. Viña Sastre works the vineyards without using herbicides or insecticides, precisely to safeguard the essence of an environment that is essential for the balance and complexity of its wines. After malolactic fermentation in barrels and 18 months of aging in new French oak, only 2,000 bottles of Pesus reach the market.
TASTING
View: Cherry color with garnet edges.
Nose:
Very powerful and complex, highlighting the ripeness of the grape with fruity aromas (prune) and the toasted (roasted coffee, toffee) of the wood that embraces the wine, it has a mineral background (flint and slate) and spicy tones (cinnamon, pepper and some vanilla), menthol, woods and aromatic herbs (sandalwood and thyme).
Mouth:
Elegant and very expressive, corporeal but balanced, with well-polished tannins and a truly fascinating center of black fruit. Flashes of cocoa, licorice and coffee adorn a palate that seems to want to perpetuate itself on the palate. It is easy to understand why it occupies, year after year, a privileged position in the Olympus of riverside wines.
Recommended temperature: 16ºC.
