Valdubón Reserva 2016 is a creation of the medium-production winery, Valdubón. Located on the southern slope of the Ribera del Duero, specifically in the town of Milagros, near Aranda de Duero. It has vineyards distributed in the areas of Pardilla, Castrillo, Fuentelceped, Aldehornos and Milagros. Ideal to accompany stews or rare meats, as well as desserts based on dark chocolate. Description
PREPARATION
Grapes: 100% Tempranillo
Valdubón Reserva is a single-varietal Tempranillo with a complex aroma and ripe tannins. Fermentation takes place at 28ºC for approximately 22 days, with several gentle pumping overs per day. Once devatted, malolactic fermentation takes place. After completion, it is racked until it is clean and ready for aging in barrels. A minimum of 22 months of aging in French (50%) and American (50%) oak barrels, with racking every 5 months. Subsequent refinement in the bottle for a minimum of 16 months
TASTING
View:
Intense red color.
Nose:
It is rich in ripe red fruits mixed with nuts, spices and licorice.
Mouth:
Powerful, cheerful due to its good acidity, full of ripe tannins, with elegant attack, excellent evolution and intense finish. Service temperature: 16ºC
