With it, a production heritage that had disappeared in Priorat has been recovered, and that consists of making wine as it was made during the 70s or before. It is one of the wines that aims to show the different faces of Grenache in Scala Dei, depending on its altitude, soil and production. Prizes and scores:

Description
PREPARATION
Grape: 100% Garnacha. With this red wine, Scala Dei Sant Antoni, we wanted to recover a production heritage that existed in Priorat and that takes us back to the first bottlings of Cellers de Scala Dei. So, after investigating how those bottles from the 70s had been made, we have vinified the Sant Antoni wine. The harvest was carried out during the first week of October, in small boxes, with 100% of the stems in fermentation, but with the grapes crushed (not whole). It is fermented in a small 3,500 liter cement tank, imitating the temperature peaks typical of fermentations of the last century, without added yeast and pressed in the cement tank itself. This wine is aged for 14 months in a non-new 1400 liter “foudre”.
