Saint James was born in Saint-Pierre de la Martinique in 1765, at the hands of the Reverend Father Edmund Lefebure, Superior of the Convent of the Brothers of Charity and a skilled alchemist. This priest created a reed spirit called “Guildive” or “Tafia”. A man of faith, but also with good business sense, Father Lefebure began shipping rum to the British colonies geographically close to North America. This Rum was named Saint Jacques, in homage to Jacques Dyel, who dedicated his life to the development of the Island of Martinique, and became Saint James for commercial reasons in order to be more English. This rum is perfect to enjoy neat, on the rocks, or as a base for classic and tropical cocktails. Its versatility and exceptional flavor make it a popular choice among rum lovers around the world.

PREPARATION

The production of Saint James White Rum begins with the careful selection of mature, high-quality sugar cane. The canes are cut by hand and quickly transported to the distillery to preserve their freshness and flavor. The cane juice is then extracted through a milling process and subjected to fermentation to convert the sugars into alcohol. Once fermented, the resulting liquid is distilled in traditional copper stills, following artisanal techniques passed down from generation to generation. This slow and meticulous distillation is essential to obtain a high-quality rum with a unique personality. The Saint James White Rum is characterized by its purity and clarity. After distillation, the rum goes through a filtration process to eliminate any impurities and acquire its characteristic smoothness. This process also gives it its crystalline color and light body. Although the Saint James White Rum has not been subjected to aging in oak barrels like its aged rum brothers, it retains all the essence of sugar cane and the fresh and vibrant flavors of the Caribbean.

View: Perfectly clear and crystalline.

 

Nose: It has aromas of freshly cut sugar cane. It is floral, fruity and light.

 

Mouth: In the mouth it is soft and warm. Typically fruity flavors stand out.
