PREPARATION
Saint James Vieux 15 Years is made in Sainte-Marie (Martinique) by Saint-James, the oldest brand of Martinique rum, and matures for at least 15 years in heavily toasted American oak barrels in a tropical climate with constant heat, becoming enriched with aromas and reaching a complexity worthy of the greatest distillates. Martinique is the only French overseas department that benefits from an A.O.C. for its rum. This designation obtained in 1996 reflects the unique character of “agricole” rum from Martinique, expressing the close link between production, terroir and generations of skill and knowledge. Saint James rum is produced by fermenting pure cane juice followed by distillation in Creole columns. This method, recognized as A.O.C Martinique rum, gives Saint James rums a multitude of aromas, with subtle fruity bouquets perfectly adapted to aging in oak barrels. No sweetening agents are allowed.
TASTING
View: Crystalline copper mahogany color.
Nose: Woody notes (mushrooms, dry wood) mix with toasted notes (charred wood) linked to the charring of the barrels.
Mouth: Tannins and wood dominate the palate with dry/charred wood notes covering the entire mouth. The flavors linger on the palate for a notable long finish.
