Pingus is the nickname by which Peter Sisseck was known in his native Denmark and is also the name of his most desired wine. It combines all the knowledge acquired by its creator in Bordeaux, California and in the Hacienda Monasterio winery, from the same DO Ribera del Duero. The most expensive wine in Spain was released in 1995 and since then it has not stopped garnering praise and praise from all specialized international critics. We are faced with a wine that became a coveted object of desire almost from the first bottle, so much so that it is not easy to find bottles of Pingus, since the demand, despite its price, is very high. A very versatile wine. Pingus pairs excellently with all types of main dishes of red meat, big game, roasts... as well as stews, legumes and other traditional stews. Prizes and scores:

Description
PREPARATION
Grapes: 100% Tinto Fino
All the grapes used in its production are very old fine red grapes and have been grown according to biodynamic principles since 2000. In the winery, the vinifications are meticulous, almost artisanal, and the control over the wines is exhaustive, seeking an organoleptic excellence that is undoubtedly achieved with each harvest. The grapes are harvested very ripe and manually, selecting the best specimens in the field. The must undergoes malolactic fermentation in wood; Pumping over is avoided and the lees are bazuqueado. New wooden Bordeaux barrels have gradually lost prominence in favor of used wood and large volumes. The must obtained is transferred to oak vats, which previously contained several wines, where it ferments together with its native yeasts. The resulting wine is transferred to French oak barrels, where a long aging of 22 months takes place, during which the wine rests, undergoing 2 annual rackings. After aging, Pingus is clarified by adding egg whites and finally bottled for marketing.
TASTING
View:
Deep scarlet color, with a bluish edge.
Nose:
The aromas of aging dress it up and prepare the wine to delight with every sip. The nose is harmonious and accessible, balsamic and floral.
Mouth:
In the mouth it is broad and juicy, with sweet and polished tannins, good acidity and a structure based on balance; almost perfect texture, pure liquid fruit according to Peter Sisseck himself. A comforting wine, with a powerful and incredibly long finish, which feeds its legend with every drop. Service temperature: 16ºC.
