Payoya Negra 2020 is a wine with a marked personality of the land and the native varieties from which it comes. The black payoya that gives its name to this red wine with a minimum of 12 months of aging, and illustrates its label, is a native Andalusian goat whose milk is used to make the area's cheese. What better animal to give name to an Andalusian wine so personal, so pure and with so much art.

Description
PREPARATION
Grapes: 70% Tintilla de Rota, 20% Syrah and 10% Romé.
To make the Payoya Negra 2020 wine, the grapes come from our own vineyards located between 600 and 900 meters above sea level, with an area of 35 hectares of vineyards spread over small plots. Clay soil, loamy sand and in some plots with limestone. The harvest is carried out manually, the grapes are transported to the winery in small 7kg boxes. The must undergoes a long maceration. Fermentation at 25ºC in concrete eggs and aging for 12 months in 225-liter untoasted and medium-toasted French Allier oak barrels, the rest in the bottle.
TASTING
View:
Bright cherry red color.
Nose:
Aromas of red fruit, strawberries, raspberries, freshly cut grass, fresh and with a spicy final touch.
Mouth:
Creamy, fresh with well-integrated ripe tannins, and a long aftertaste. Recommended temperature: Serve between 16ºC and 18ºC.
