The Pauillac de Latour 2021 is a vintage marked by a more classic, fresh and Atlantic profile in Bordeaux. Unlike ultra-warm and powerful vintages (such as 2018 or 2020), 2021 stands out for its elegance, lower alcohol content and vibrant acidity. Château Latour is one of the most legendary and prestigious wine estates in the world. Its history, its technical rigor and the quality of its terroirs place it at the pinnacle of global oenology. In 2012, Château Latour made a historic decision in Bordeaux: to abandon the usual sales system En Primeur (sales to the advanced in barrel). The winery prefers to store the wines in its own underground galleries and release them to the market only when its team considers that they are at the perfect moment of maturity to be enjoyed.

Winemaking
Grapes: 75% Cabernet Sauvignon, 25% Merlot
The grapes are harvested by hand in small boxes to avoid damaging the grains. Upon arrival at the winery, it goes through a double selection table (manual and optical) to discard any grapes that are not in a perfect state of ripeness. The grapes are destemmed and placed in thermoregulated stainless steel tanks. Each plot is vinified separately. The alcoholic fermentation is carried out at a controlled temperature, applying gentle pumping over to extract color, aromas and noble tannins without bitterness.
The winemaking team will taste each tank. Those items that will not be part of the Grand Vin or Les Forts de Latour are destined for this Pauillac de Latour. In 2021, a final blend of 75% Cabernet Sauvignon (structure) and 25% Merlot (roundness and fruit) was defined.
Unlike Grand Vin (which uses 100% new oak), Pauillac de Latour is aged for one year in French oak barrels with a lower percentage of new wood (or single-use barrels). This preserves the freshness of the fruit and prevents the wood from dominating the profile of the wine.
The wine is traditionally clarified with egg white before being bottled. Château Latour keeps the bottles in its underground galleries until the wine reaches optimal maturity to go on the market.
Tasting notes
View:
It presents a bright and intense ruby red color, with purple and violet reflections near the edge that show its youth. Medium-high layer, clean and crystalline.
Nose:
The wild red and black fruits stand out clearly at their optimal point of maturity. Blackcurrants, raspberries, blackberries and a touch of acidic cranberry are perceived. It presents a very elegant noble herbal profile, with hints of fresh violets, iris flower and a subtle nuance of cassis leaf and sweet pepper (typical of the Atlantic cut of Cabernet Sauvignon in 2021). Delicately integrated without covering the fruit. There are hints of freshly cut cedar, soft smoke, cigar box and flashes of sweet spices such as white pepper and very fine vanilla. It marks a very characteristic background of graphite and flint stone.
Mouth:
Enter the mouth with great freshness, cleanliness and fluidity. It is a direct and vertical impact, far from the heaviness of warmer vintages. Medium bodied, balanced and very stylized. The Cabernet Sauvignon gives it a firm backbone, while the Merlot provides just the right amount of roundness and juiciness in the center of the palate. Very fine, polished and elegant texture. They are small grain tannins, present to give structure but without being dry, astringent or rough. It stands out for its vibrant and well-integrated acidity. It gives it tension, agility and a crisp sensation that constantly invites you to take another sip. Medium-long finish, very clean and dynamic. It leaves a long memory of black currant, graphite, cedar and a fine spicy note. In the mouth it is a wine of great finesse and easy to drink. It is defined by its Atlantic tension, freshness and the classic elegance of Pauillac without the need for a high alcoholic volume.
Food pairing
The ideal pairing looks for meats and dishes of medium intensity, juicy and not excessively fatty, that respect the elegance and subtlety of this vintage.
