The Olivier Leflaive Meursault 2023 is an emblematic Village category white wine from the Côte de Beaune, recognized for embodying the classic style of the Meursault appellation: a harmonious combination of opulence, richness on the palate, buttery notes and a firm mineral texture.

Olivier Leflaive makes this Meursault by combining grapes from multiple plots distributed throughout the appellation. The higher altitude plots provide citric acidity and minerality, while those in the lower area provide the density and meatiness characteristic of the town. A gentle pressing of the whole bunch is carried out. Alcoholic and malolactic fermentation (100%) take place in French oak barrels using native yeasts. During its year of aging in wood, a methodical stirring of fine lees is carried out to increase the glyceric sensation, the creaminess and the development of nuances of fresh butter and dried fruits.

Grapes: 100% Chardonnay

The elaboration of Olivier Leflaive Meursault 2023 follows the traditional method of the Côte de Beaune, designed to achieve the characteristic profile of Meursault: great breadth, creamy texture and a palate structured on a base mineral.

The 100% Chardonnay grapes from selected plots throughout the Meursault area are manually picked in small perforated boxes to preserve the integrity of the fruit and prevent oxidation. The whole bunches are fed directly into the pneumatic press. Slow and progressive pressing is applied to extract a clean must without bitter tannins. Next, the must undergoes a débourbage (static cold decantation) for 12 to 24 hours to decant the heavier lees.

The decanted must is transferred to French oak barrels where it undergoes spontaneous alcoholic fermentation with native yeasts. Subsequently, it completes 100% malolactic fermentation, transforming malic acid into lactic acid to gain softness, body and stability.

The wine rests for 12 months in French oak barrels, of which between 15% and 20% are new. During the first months of aging, bâtonnage (methodical stirring of the fine lees) is applied, a fundamental process in Meursault to develop its famous buttery aromas, notes of dried fruits and glyceric texture. After a year in wood, the wine is removed from the barrels and transferred to stainless steel tanks for an additional 4 months. This final cold phase without wood allows the batches from the different plots to be assembled, integrate the oak and refresh the acid tension. It is finished with a light clarification, gentle filtration and bottling by gravity.

Tasting notes

Bright straw yellow color with golden reflections and greenish flashes.

Nose:

Expressive, spacious and elegant. It shows aromas of stone fruit (yellow peach, apricot), ripe apple and lemon peel, wrapped by lactic memories (butter, cream), baked brioche, toasted hazelnut and a subtle smoky and chalky background.

Mouth:

Immersive and glossy input. It shows a dense, rich and structured center in the mouth, balanced by a thread of fresh acidity that prevents the wine from being heavy. Long and persistent, leaving a smoky, toasted and saline aftertaste characteristic of the calcareous soils of Meursault.

Food pairing

Its dense and complex profile requires dishes with a certain aromatic and fatty volume:

  • Baked turbot with cream, confit cod or sole a la meunière.

  • Gratin lobster, lobster or seared scallops with brown butter sauce.

  • Pularda or free-range chicken in supreme sauce or with morel cream (morilles).

  • Pressed or soft cheeses such as matured Comté, Beaufort or Epoisses.
