Organic white wine made by Bodegas Nodus, on the El Renegado estate, in Caudete de las Fuentes (Valencia), under the D.O. Utiel-Requena.

It is made exclusively with Chardonnay grapes and stands out for its fermentation in new oak barrels, which give it elegance, complexity and excellent gastronomic capacity.

Winemaking

Grapes: 100% Chardonnay

The grapes come from certified organic vineyards, where environmentally friendly viticulture is practiced. The harvest is carried out when the Chardonnay reaches an optimal balance between sugar, acidity and aromatic maturity. After the harvest, the clusters are carefully selected and the grapes are gently pressed. Only the highest quality must is used, avoiding components that could add bitterness or imbalance to the wine.

Before fermentation, the must remains for a period of cold pre-fermentation maceration. This technique favors the extraction of varietal aromas and provides greater aromatic intensity, highlighting memories of tropical fruits and citrus.

Fermentation takes place in new oak barrels, where the must is slowly transformed into wine. This is one of the distinctive features of this Chardonnay. Once fermentation is complete, the wine remains for about three months in French oak barrels, in contact with its fine lees. During this period, batonnages are carried out, a technique that increases the smoothness, volume in the mouth and aromatic complexity of the wine.

After aging, the wine is stabilized and bottled to preserve all its freshness and elegance, maintaining the balance between the Chardonnay fruit and the notes provided by the barrel.

Tasting notes

It has a bright straw yellow color with golden reflections. Clean and bright, with good intensity.

Nose:

You can appreciate intense aromas of tropical fruits such as pineapple, mango and passion fruit. Notes of peach and ripe citrus. Elegant nuances of vanilla, butter and toast from barrel aging. Delicate floral memories and a light touch of honey.

Mouth:

Wide, fresh and silky entry. Excellent balance between lively acidity and creamy texture. Flavors of ripe tropical fruit, apple and citrus, accompanied by notes of vanilla, butter and a subtle touch of oak. Long and persistent finish. Fresh and balanced.

Food pairing

Wine with good structure, creamy texture and balanced acidity, which makes it an excellent companion for a wide variety of dishes, among them, the most recommended are fish and shellfish such as turbot or sea bass, salmon and lobster, lobster, crayfish or scallops.

Excellent with creamy seafood rice. It can also be accompanied by pasta and cheese.
