PREPARATION
Aviation Gin is handcrafted Dutch-style in small batches of 100 cases by a small, dedicated team of Master Distillers in Portland, Oregon, distilled from pure rye alcohol using a proprietary 48-hour maceration process of its botanicals that produces a pure blend of botanical flavor. It owes its name to a cocktail created at the beginning of the 20th century "Cocktail Aviation". Seven different botanicals are used in the distillation: Juniper, cardamom, coriander, lavender, Indian sarsaparilla, anise seeds and dried orange peel.
Its main characteristic is the lesser predominance of juniper compared to other classic gins such as London Dry or Navy Strength. In this way, the flavor of the other botanicals takes on greater prominence. With this gin the name “New Western Dry Gin” was born, since it was Ryan Margarian, one of its creators, who invented the term.

Nose: Aroma of juniper and cardamom with a smoky and herbal touch, notes of spices among which sarsaparilla stands out.
Mouth: We find the bitter sweetness of orange peel and anise, the richness of cardamom, the spicy touch of coriander, the floral delicacy of lavender, as well as the surprising sarsaparilla. Clean, slightly citric, smoky and spicy finish.[
