Winemaking
Grapes: 60% Pinot noir, 40% Chardonnay
Grapes from various vineyards located in Verzenay, Verzy, Beaumont-sur-Vesle, Ay, Avize, Mesnil-sur-Oger or Cramant. 1/3 of the vineyard belongs to La Rivière, 1/3 to La Montagne and 1/3 vineyard to La Côte. 25% of the wines are vinified in wood (French oak barrels). Without malolactic fermentation. 7 years of aging with its lees in rhyme. Dosage of 7 grams of sugar per liter.
Tasting notes
View: Intense, luminous and brilliant golden color. It shows an ultra-fine and dynamic effervescence.
Nose: Intense, perfumed and concentrated 'Bouquet' of yellow fruits such as white peach and mirabelle plum, and notes of hazelnuts and toasted almonds.
Mouth: Energetic and vibrant and silky, almost creamy. It is accompanied by candied citrus flavors and iodized spices. Its finish reveals light notes of almond, intense and saline that provide delicacy, and at the same time, concentration
Recommended temperature: Between 6 and 8ºC.
Food pairing
It combines perfectly with seafood, blue fish such as salmon and tuna, with soft and creamy cheese and with pork.
